Missy’s Kitchen: Quick N’ Healthy Blender Muffins

Hi Everyone! My name is Missy, and this is my kitchen!

Here at Activa Naturals we like to keep things simple and natural, just like this super fast, and delicious banana blender muffin recipe!

Every week on Missy’s Kitchen I will be sharing fantastic recipe ideas for people who love tasty treats but hate the excess fats and sugars that come along with them (as well as the time it takes to make such treats!)

In this episode we will be making quick n’ easy Blender Muffins.
All you will need is a blender and a muffin tray.

Missy’s Kitchen recipe will make 12 muffins – Let’s Begin!

Pre-heat your oven to 400 degrees Fahrenheit.

Oats                               2 cups
Bananas                        2
Eggs                               2
Plain Greek Yogurt     1 cup
Chia Seeds                    1/4 cup
Sweetener                     1 /2 cup
Baking Soda                 1 1/2 tsp
Vanilla Extract            just a dash

Always start with your wet ingredients when baking, working up to your dry.

Place all ingredients in the blender and blend away!
(This may take longer than a normal blending adventure would as it will be very thick). Use a spatula to aid in the blending process.

Once you have a fairly thick and gooey consistency (yet blended-we don’t want chunks of whole oats), pour the “dough” into your already lined cupcake tray. Next i like to garnish my muffins for a bit of added flavor and sweetness with shredded coconut and a few chocolate chips! **Feel free to leave them plain as they are just as tasty!!**

Pop those babies in the oven and set your timer for 20 minutes!
(This is where I like to do my cleanup…which literally consists of rinsing my blender and then filling it with hot soapy water and blending again!)

Once the muffins are done(I like to test with a toothpick through the middle), take them out and let them cool!

VOILA! You now have healthy and delicious banana muffins!
